Reese's Peanut Butter Cups Snack

I got this recipe from a Hershey's Classic cook book. I think these are absolutely delicious!

Ingredients:
72 Hershey's Kisses, divided
1 cup Peanut Butter
1 cup Powdered Sugar
1 tbls Butter or Margarine, softened

Directions:

  1.  Line 24 mini baking cups with paper liners. 
  2.  Place 48 chocolates in a small microwave-safe bowl. Microwave at high for 1 minute or until                            chocolate is melted and smooth. If the chocolate isn't melted. I would continue melting in 30 second intervals. 
  3. Using a small brush (I like to use a BBQ brush) coat the insides of the paper liners. The easiest way I've found is putting a huge dab in the middle and then painting it up the edges. You want the chocolate to be thick. Refrigerate and let set for 20 minute or until set; reapply melted chocolate to any thin spots. Refrigerate until firm, 2 hours or over night. Gently peel paper from chocolate cups.  
  4. Beat peanut butter, powdered sugar, and butter with electric mixer on medium speed in a small bowl until smooth. Spoon into chocolate cups. Then, top each cup with a kiss. Cover and refrigerate leftover cups.
* Makes about 2 dozen cups

Peanut Butter Cookies

I'm starting out nice and sweet and simple. It's the easiest gluten free recipe I've ever made and it's so easy to remember.

Ingredients:
1 cup Peanut Butter
1 cup Sugar
1 Egg

Directions:
 Mix all ingredients together. Then, form into round balls and flatten them with a fork dipped with sugar. Bake on 350 for 10 minutes.

* Make sure the Peanut Butter is gluten free. Gluten might be hidden in molasses. I found that Skippy is a good gluten free brand.

Humble Beginnings

This is a blog for all my gluten free recipes that I try. I decided to make this for people like my grandma and aunt. Most of these recipes will be sweets since I have not ventured into the "real" foods yet. I hope you enjoy.
